Our Story

Although we are starting off as a bento shop, our primary focus is to incorporate the kindness and attentiveness characteristic of the Japanese. We approach the preparation and presentation, which are customary practices in Japan, with dedication, aiming to make the local community love the taste of Japan

The Trigger for Starting Minatoku Kitchen

Since the outbreak of COVID-19, many restaurants in Japan have been forced to close down. During the time when going out was prohibited, I regretted not being able to do anything to help the restaurant industry.

In the world where people need to work to survive, the atmosphere of restaurants and the enjoyment of delicious food had always been the source of our energy. Even during tough times or when things didn’t go well at work, visiting a restaurant, enjoying good food, and being in a pleasant environment always gave me the motivation to keep going the next day.

While considering opening a restaurant in Japan, observing the government’s situation and policies made me realize that the type of restaurant I truly wanted to run couldn’t be achieved there.

With the desire to embody that vision in a place I already loved, Hawaii, I decided to start my business here.

Even in Hawaii, we experienced a lockdown due to the pandemic, and it’s undeniable that the island, which is also a tourist destination, suffered significant damage compared to Japan.

 

Creating Jobs

Furthermore, while conducting job interviews, I encountered the reality that many workers were unable to return to full-time employment, uncertain of when they would be able to fully return to work and juggle multiple jobs.

With these factors in mind, I aim to contribute back to the workforce by creating job opportunities by expanding my own business.

Additionally, I want to give back to the customers who visit the shop by offering menus and events that provide value to them. If the shop flourishes, everyone benefits. The concept is to create a cozy and friendly place, working hand in hand with local people.

Organic Rice

We use 100% Niigata-grown Koshihikari rice. The rice is imported from Japan in a dedicated low-temperature container, ensuring optimal temperature preservation. After arrival, it is stored in our refrigeration unit. Before use, we polish the rice, allowing us to provide the deliciousness of freshly harvested rice.

Chef’s Specials

Our chef has over 20 years of experience working in Japanese cuisine, sushi restaurants, and traditional Japanese eateries, so we have perfected our recipes. We are constantly working on developing new menus and other offerings in response to the feedback and preferences of our customers.
